Almost every homemade ricotta recipe misses one important step—and it can get you a LOT more cheese. 🇮🇹 The basic recipe couldn't be easier: HOMEMADE RICOTTA ½ gallon (8 cups / 1.9 L) whole milk 1–1½ tsp salt ¼ cup (60 mL) white vinegar Slowly heat the milk to about 190°F—steaming, but not boiling. Turn off the heat, add the salt and vinegar and stir gently once or twice. Cover and leave it alone for 15–20 minutes. Scoop the curds into a ricotta basket or fine-mesh strainer and let them drain.
