Roasted potatoes are a great side dish or just a yummy snack! I can never make enough of them in our house. We like to eat them with ranch and ketchup. You can use any kind of potatoes- baby potatoes, russet, gold Yukon, seriously any! Cut the little ones in half, cut the big ones in wedges. You can choose to peel or leave the peel.
